OLIVE OIL MADE FROM- CORREGGIOLA OLIVESWindy Willow Olive Grove produces Extra Virgin Olive Oil. Our farm is located in the heart of Two Wells, South Australia. All the trees were imported by Joe Gallace from the southern parts of Italy - Roccella Ionica and are all one variety of olive tree called Correggiola. Correggiola olives are generally small in size but have a high oil content and tend to ripen late in the season giving it a stronger fresher taste. We tend to pick early to mid-season as picking later will cause an increase in acidity. The founder of the farm Joe GALLACE commenced its operation in 2001 & he decided along with the Giovanni FUDA family to supply only the one variant of olive fruit. His son Chris GALLACE now runs the farm and the EVOO is sold throughout Australia by Vince FUDA. The grove produces annually an enhanced & truly pure extra virgin olive oil. The purity of the olives means it has an excellent balance & a low acidity ( see reports section ) this in turn provides very good shelf life of three to four years if kept in good climate conditions. Most of the claimed extra virgin olive oil available in shops these days is commonly referred to as 'European Oil' meaning that it is a blend of numerous types of oil & different variants of olives and often Correggiola is used to increase the flavors of these subordinate oils ( see the ABOUT section to read up on some oil supply companies ). Olive trees are self-propagating in that we don’t need to use pollinators nor do we use any pesticides / herbicide sprays or leaf retention sprays prior to picking ! Again providing a natural pure ORGANIC Extra Virgin Olive Oil. Due to the South Australian climate generally each year we pick relatively early in the season which commonly produces a green / yellow looking oil in colour. The olives are cold pressed the following morning after each pick which produces a fresher tasting oil with and a balanced acidity. We pride ourselves on its freshness coming from various good farming practices. The South Australia climate is optimum for growing olives in that it is dry & hot. The olive trees are therefore not subjected to high volumes of insects or diseases as the leaves do not need to be treated for mould or insects as such & this intern commonly gives us good yearly yields. We currently supply numerous Italian & international restaurants direct throughout Australia & all comment on how balanced & fruity our EVOO is and hence is used in salads and cooking meat & fish mainly ! |
